Healthy Blueberry Recipes

One of our recent blogs mentioned how important it is to include blueberries in your diet. Blueberries are full of antioxidants and an excellent source of vitamin C and potassium. Berries play an important role in preventing cell damage and many health conditions, such as cancer, arthritis, and heart disease. If you are looking for more ways to incorporate blueberries into your diet, try following some of these easy and healthy recipes.


Blueberry Oatmeal Bars

Ingredients:

  • 1 cup old-fashioned oats

  • ¾ cup whole wheat flour

  • ⅓ cup light brown sugar

  • ½ teaspoon cinnamon

  • 6 tablespoons unsalted butter

  • ¼ teaspoon salt

  • 2 cups fresh blueberries

  • 1 teaspoon cornstarch

  • 1 teaspoon lemon juice

  • 1 teaspoon granulated sugar

Preheat oven to 375 degrees Fahrenheit and line an 8x8 baking pan with parchment paper. Combine dry ingredients in a medium bowl, then stir in melted butter until everything is evenly combined. Place ½ of the mixture into the baking pan. Sprinkle blueberries on top, then add the rest of the mixture. Top with blueberries, granulated sugar, and lemon juice. Bake for 30-40 minutes and let cool before serving.


Blueberry Smoothie

Ingredients:

  • 1 cup frozen blueberries

  • 2 large Medjool dates

  • ½ cup greek yogurt

  • 1 scoop vanilla protein powder

  • 1 tablespoon flaxseeds

  • ¼ cup rolled oats

  • ⅔ cup Almond Milk

In a blender, combine all ingredients until you reach your desired consistency. Feel free to add any other ingredients to your smoothie mixture.


Blueberry Yogurt Swirl Popsicles

Ingredients:

  • 2 cups blueberries

  • 2 tablespoons agave or honey

  • 2 cups vanilla greek yogurt

Blend blueberries until smoothie consistency. Combine the blueberry mixture, agave (or honey), and greek yogurt in a large mixing bowl. Do not fully blend, to create a swirl pattern. Pour the mixture evenly into popsicle molds and add wooden popsicle sticks. Freeze overnight.
